I love making homemade fetuccini alfredo, but I cam across this recipe and tried it the other night.
Needless to say, hubby, daughter, and myself all had seconds (my son was the only one who refused to try it), but it was the most delicious meal! And super easy too! Let me know your thoughts if you try it!

Ingredients:
1 pound (16 ounces) twist pasta (such as rotini noodles)
1/3 cup butter
3 tablespoons all-purpose flour
3 cups (1 1/2 pints) heavy cream
2 cups (8 oucnes) shredded Italian cheese blend
1 teaspoon salt
1/2 teaspoon pepper
Parmesan cheese
Italian flavored bread crumbs
Instructions:
Preheat oven to 325*F.
Cook the pasta according to the package directions and drain; return it to the pot.
Melt the butter in a large skillet over medium heat, stirring frequently.
Add the flour and stir constanty for 1-2 minutes, or until the mixture is smooth and lighty browned.
Stir in the cream and remove from heat.
Add the italian cheese blend, salt, and pepper. Mix well.
Pour over the cooked pasta and toss to coat.
Place in a 9×13 baking dish that has been coated with nonstick cooking spray.
Sprinkle the top with Parmesan cheese and the bread crumbs.
Bake for 30-35 minutes, or until warmed through.
It says it serves 6, but three of us at two helpings and a friend came over later to have a small plate and test taste so I think it makes more than 6 servings (we still have 1/4 of a pan leftover).
Cook time is approximately 1 hour.
