Valentine’s Day is fun. I enjoy doing things for my children more so than my husband only because I do not need a special day during the year to tell him how much I love him!
This year, I decided to make cupcakes for the kids for Valentine’s Day, but I wanted to mix up the regular routine of cupcakes. This time, I made cherry soda cupcakes.
Originally, I was seeking out raspberry ginger ale, but alas, no one in Arizona carries it so I had to settle for Cherry 7Up (which also comes in a diet version so you could try that as well.)
The soda is a pink/red color and I was hoping that would be enough color to color the actual cupcakes. Unfortunately, all I got were very lightly tinted pink cupcakes so with the second batch, I added red food coloring and got red cupcakes.
The first batch were with the soda only so they were tinted pink and with half of the batch, I added Valentine’s confetti into the batter to make my own “funfetti” cupcake. The second batch I added the food coloring so I got the red cupcakes, and again, half of the batch had Valentine’s confetti into the batter.
Overall consensus: The cupcakes were delicious!
Ingredients:
1 box of white cake mix
12 ounce Cherry 7Up
Red food coloring (optional)
Valentine’s confetti (optional)
Frosting
Directions:
1. In a bowl, mix the cake mix and 12 ounces of Cherry 7Up.
Optional:
Add in red food coloring to make the color a darker shade of pink or red.
2. Spoon into muffin cups.
Optional:
Pour some Valentine’s confetti into the batter (that is in the muffin cups) and swirl with a butter knife to mix in.
3. Bake according to the directions on the box (18 minutes was perfect for ours).
Tip:
They are cooked when you can insert a toothpick in the middle and it comes out clean.
4. Let cool.
5. Frost.
Optional:
Add red food color to vanilla frosting for pink or red.

Add Valentine’s confetti for additional fun!
