Crab Enchiladas
Ingredients:
Flour tortillas
32 ounces crab meat
4 garlic cloves
6 tablespoons jalapenos
2 cups tomatoes
4 tablespoons parsley
4 tablespoons cilantro
4 cups sour cream
2 cups milk
2 teaspoons white ground pepper
Directions:
If you bought fresh crab meat, pick through remove any bits of shell or cartilage. If you bought imitation crab meat, you can skip picking through it, but I would give it a good shredding/chopping.
In a heavy skillet, heat the olive oil over medium heat.
Add garlic and saute for a short time.
Add the jalapeños, tomatoes, parsley, and cilantro and cook for about 3 minutes.
Add crab meat and cook just until crab meat is heated through.
In a separate bowl, Whisk the sour cream, milk and white pepper together and set aside.
Place crab meat filling down the center of each tortilla and roll it up. Place on serving plate and top with sour cream sauce.
Tip:
If you do not like spicy, I would recommend scaling back on the jalapenos. Hubby de-seeded our jalapenos and it still had a strong kick/spice.
