Biscuits and Gravy Recipe
I remember growing up, my step-dad would make a weekend Hardee’s run to get biscuits and gravy because no other take-out place carried them, and frankly, weekend breakfast at a sit down restaurant was absurd.
I am not sure why he never made homemade biscuits and gravy, but hubby’s grandpa taught him and I am forever grateful because this is one of our favorite meals!
PS: This is not a healthy meal!
(We’re lucky if we get it once every six months!)
Ingredients:
2lbs sausage (hubby makes his with one mild and one hot generally, but I have requested he only use the mild as the hot has a kick)
Biscuits (if you have time and desire, you could make homemade biscuits, but we buy the canned refridgerator biscuits)
Flour
Milk
Salt and pepper
Directions:
- Brown sausage in a large pan big enough to hold the gravy.
- Once the sausage is cooked, drain and save the grease from the sausage to make your gravy base.
- Place the oil back in pan and put on medium heat – enough to get the oil to boil.
- Add in flour a little at a time until you get the consistency of peanut butter.
- Let the oil and flour cook for a while until it is golden brown – remember to stir constantly or the flour will burn.
- Once the flour is cooked, slowly add in the milk while whisking until you get the consistency of a thin gravy.
- Allow to come to a boil, stirring constantly (or the milk will burn).
- The gravy will thicken up when it comes to a boil. You can add more milk to thin it out.
- At this point, add in the seasoning that you would like (salt and pepper) and taste the gravy to see if it needs anything else.
- After seasoning is to your liking, put the sausage back in to the gravy and allow to warm.
- Turn the heat down and let sit stirring occasionally to make sure the stuff on the bottom does not burn.
- Make the biscuits following the directions on the can.
