Apple Compote Recipe

and I decided that since I was craving apples, I would try my hand at an apple compote (and round out our fruit selection!)
So here is my apple compote recipe!
Ingredients:
4 large red apples
3/4 cups brown sugar
1/4 teaspoon cinnamon
3 tablespoons lemon juice
1/2 teaspoon vanilla
Directions:
Peel the apples and cut into smaller pieces.
Once they are cut, toss them into a big enough pot that it will hold the apples, but still allow room to stir them up.
Add in the brown sugar, cinnamon, and lemon juice.
Bring to a simmer over medium heat, stirring occasionally.
Cover and reduce the heat to medium-low and simmer for about 5 minutes or until the apples are the right texture. I like mine a little softer so we did ours a little longer.
Remove from the heat and add in vanilla.
We served ours over pancakes, but they would taste good on just about anything. I think I’ll try vanilla ice cream next!
