Summer is here and with that means heat. Hot heat. Triple digit heat.
That also means revamping my menu plans to include easy (not too many ingredients) and does not require the oven (because it is hot enough in the house without heating it even more with the oven!)
With all of the above in mind, we developed a delicious, homemade BBQ chicken pizza!
We purchased the following:
Pre-made pizza crust (saves time and it held up easier when we grilled it)
KC Masterpiece BBQ Original Sauce
Chicken (precooked chicken would definitely save time, otherwise you can cook it the day/night of, or cook it a day or two ahead of time to save time)
Cheddar cheese (or whatever cheese you prefer to top it with)
We thought (after thought of course) of adding crumbled bacon (tell me that wouldn’t be delicious!) Of course, it was an after thought this time so we will have to remember next time!
To make this deliciousness, hubby grilled the chicken and basted it with the KC Masterpiece Original BBQ sauce.
When the chicken was all cooked, it brought it back in the house and cut it up into small cubes..
Instead of using pizza sauce, we used KC Masterpiece Original BBQ Sauce as our sauce.
Hubby sprinkled cheddar cheese on the sauce, spread the chicken on top of the cheese, and then poured some KC Masterpiece Original BBQ sauce over the top.
Now, remember, I said I don’t want to turn the oven on and who doesn’t like to grill in the summer, right?
Well… in order to grill in the summer, you need to have a grill. Which we have. But it is out of propane. So, we made our own makeshift charcoal grill in the backyard!
As you can see, hubby put the entire pizza on the makeshift grill and then covered it to melt the cheese (which only took about 5 to 8 minutes).
I have to admit, I am not a big fan of chicken, but I am a huge fan of BBQ sauce and an even bigger fan of pizza.
When Buggy found out what we were having for dinner, the first thing she said was “please leave off the sauce”. (She loves chicken, but not BBQ sauce and not pizza.)
This BBQ Chicken Pizza was so good, she ate a normal dinner of noodles (because she didn’t want to eat this because we wouldn’t not put the sauce on) and then tasted our pizza and ended up eating TWO pieces!
The KC Masterpiece Original BBQ Sauce gave it a sweet flavor that had a slight kick after a few bites, but I loved it. In fact, I thought our first pizza didn’t have enough BBQ sauce on it so hubby had to add more to the second pizza!
This is definitely my new favorite summer BBQ dish! What’s yours?
- Pizza Crust
- KC Masterpiece Original BBQ Sauce
- Shredded Cheddar Cheese
- Grill chicken and baste with KC Masterpiece Original BBQ Sauce.
- When chicken is fully cooked, cut into cubed pieces. Set aside.
- Spread KC Masterpiece Original BBQ Sauce on to pizza crust.
- Sprinkle pizza with shredded cheddar cheese.
- Spread the grilled chicken on top of the cheese.
- Pour KC Masterpiece Original BBQ Sauce over the top of the entire pizza (as desired).
- Grill or cook over open fire and cover, for 5 to 8 minutes.
