I was provided Pacific Foods Organic Chicken Stock, Pacific Foods Organic Cranberry Sauce and Pacific Foods Organic Pumpkin Puree.

I made a delicious Pumpkin Lava Cake with the pumpkin puree.


Pumpkin Lava Cake #Recipe #CartonSmart


Ingredients:

1 carton of Pacfic Foods Organic Pumpkin Puree

2 cups white sugar

1 cup vegetable oil

4 eggs

2 cups flour

2 tsp baking soda

1 tsp cinnamon

1/2 tsp salt

3 oz cream cheese

5 tbsp butter

1 tsp vanilla

1 3/4 cup powdered sugar

3 tsp milk


Directions:

Preheat oven to 350 degrees.

In a large bowl, mix pumpkin puree, sugar, and vegetable oil.

Add eggs and mix well.

Mix in flour, baking soda, cinnamon, and salt.

Scoop into 6 greased individual mini pie pans.

In a second bowl, beat together cream cheese, butter, and vanilla.

Gradually add the powdered sugar.

Add up to 3 tsp of milk until frosting is desired consistency.

Spoon a spoonful of frosting into the center of the uncooked mini pie.

Place in oven and bake for approximately 28 minutes (we cooked 4 at a time).
