Pizza Lasagna – Life as Leels

Pizza Lasagna

Lately, hubby has been scouring the website for new recipes.

He found one that was floating around Facebook that was rotini pasta made with pizza ingredients.

We tried it. It was… “okay”. It didn’t quite have the taste that I was looking for so I made a few adaptions and created a pizza lasagna that was so delicious, I have been eating leftovers for days (which sadly is rare for me!)

(Forgive the not-so-great picture. Lasagna does NOT photograph well!)


Ingredients:

Lasagna noodles (I purchased a box of the non-boil ones)

1 lb sausage or Italian sausage

42 ounces of pizza sauce (give or take; I made mine with roughly 49 ounces and I found it to be too saucy)

32 ounces of cottage cheese

2 – 2 1/4 ounce cans of sliced black olives, drained (optional)

1 – 4 ounce can of mushrooms, drained (optional)

24 ounces of shredded mozzarella cheese

6 ounce package of sliced pepperoni


Directions:

Preheat oven to 350 degrees.

Grease a 9 x 13 pan.

If you are using sausage; brown sausage and drain.

Mix together pizza sauce, cottage cheese, sausage, olives and mushrooms.

Pour a thin layer of the sauce mixture on the bottom of the pan and top with a layer of lasagna noodles.

On top of the lasagna noodles, spread a decent layer of the sauce mixture.

Top the sauce mixture with pepperoni.

Top the pepperoni with mozzarella cheese.

Lay a second layer of lasagna noodles.

On top of the lasagna noodles, spread a decent layer of the sauce mixture.

Top the sauce mixture with pepperoni.

Top the pepperoni with mozzarella cheese.

Continue layering until you run out of noodles or you are content with the amount of layers you have. (I had two layers of noodles before running out and it was still good. Be sure to end with the mozzarella cheese layer being the last layer.)

Put in oven and cook for approximately 30 minutes.

Let cool and enjoy!
