Ingredients:

1 (8 ounce) package cream cheese, softened

2 tablespoons dried chives (found in the seasoning aisle- unbeknownst to me)

1 clove garlic, minced

4 skinless, boneless chicken breast halves, butterflied

4 slices turkey bacon

2 tablespoons butter, melted


Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a bowl, mix the cream cheese, chives, and garlic. Divide the mixture into 4 balls.
  3. Place 1 cream cheese ball in the center of each butterflied chicken breast half. Fold the chicken over the cream cheese, wrap with a slice of turkey bacon, and secure with toothpicks. Arrange the chicken in a baking dish. Pour the butter over the chicken.
  4. Bake 30 minutes in the preheated oven, or until the bacon is crisp and the chicken is no longer pink and juices run clear.

We tried this the other night and was overall, really good. We cooked the chicken longer than 30 minutes and being that I hate chicken, probably could have actually been cooked a little longer. And personally, I didn’t care for the turkey bacon, but again, it could have been cooked longer (in my personal opinion). If you try this, come back and let me know what you thought! I would love to hear someone else’s opinion of it. Hubby and my 5 year old enjoyed it more than I did!
