Fortunately for me, I had to make an Easter cake for a celebration tomorrow (yes, a week early, but there were circumstances that required a celebration early). Now, I am one who likes to make sure that if we run out of something in the house, it gets replaced. Hubby on the other hand, not so much. I have to admit, I was a little worried that it may alter the taste of the cake, but let me tell you… hubby and I taste tested a piece of my cake (
!) and I have to tell you – that was the best cake I have ever eaten in my life! No joke. There was the faintest taste of coconut, but it was so soft and squishy and the smell… oh the smell. Even while the cake was cooking, hubby could not stop talking about the smell from the coconut oil cooking. Heavenly!
