I am one of those people who over complicates everything so making something quick and easy like a low cal shrimp caesar salad never even registered on my rader until I got a mad craving.

The only other place I had ever eaten a shrimp caesar salad was at Applebee’s and the last time I was there, they no longer offered it. It was time to climb out of my box and figure out a way to do this at home.

Let me tell you, it really was not that difficult. It required picking up four items from the store, a little baking, throwing it in a bowl, and voila!

Shopping List

Lettuce, salad mix, whatever you prefer your greens to be

Croutons

Caesar salad dressing

Popcorn shrimp


Nutrition

We purchased a Kroger salad mix (just greens). Lettuce/salad hold empty calories so we don’t need to count those.

We purchased Kroger Caesar Croutons with a serving size of 8 croutons. These 8 croutons held 30 calories, 1 gram of fat, 5 grams of carbs, and 1 gram of protein.

We purchased Kraft Classic Caesar salad dressing with a serving size of 2 tablespoons. These 2 tablespoons held 80 calories, 8 grams of fat, 2 grams of carbs, and less than 1 gram of protein. Beware though, this was high in sodium content.

Lastly, we purchased Kroger Crunchy Popcorn Shrimp (found in the frozen food aisle). The serving size was 14 shrimp (which I only used approximately 8 shrimp so I cut the numbers in half) for 210 calories (110 calories for half that), 11 grams of fat (5.5 grams), 20 grams of carbs (10 grams), and 10 grams of protein (5 grams). Again, beware, these are high in sodium.

In the end,

my salad

had 215 calories, 14.5 grams of fat, 27 grams of carbs, and 6 grams of protein.

Even if you used the suggested serving size of shrimp, you are still consuming 320 calories, 20 grams of fat, 27 grams of carbs, and 11 grams of protein.

Not bad for something that tastes yummy while watching the numbers!
